This is one of our favourites for breakfast. It's easy, quick and tasty. Definitely boost your energy to start the day.
Eggs and bread are the stars of breakfast in Western cuisine. Eggs are a great source of protein and have a good amount of calories that can be balanced with the complete diet calorie intake. An egg contains about 6.3 grams of proteins – and about 3.6 grams of protein in egg white & 2.7 grams in egg yolk. That explains why eggs play an important role in Western breakfast.
There are many ways to make eggs, from fried, boiled, to poached, scrambled eggs or omelette. Today, I would like to share this simple and easy peasy recipe for those who enjoy an omelette in the morning.
Ingredients (for 2 people):
Cherry tomatoes. You can use big tomatoes if you prefer because we will chop them into small pieces.
Mushroom. Any type of mushrooms that you like. Here, I only have King Oyster mushroom left in the fridge.
Eggs, of course.
Chorizo. Here, I use the spicy chorizo because I quite like a little kick in the taste.
Parsley.
Let's cook!
Step 1: Finely chop the mushroom, tomatoes, parsley and chorizo into small pieces.
Step 2: Crack eggs into a bowl, add a bit of milk, salt and pepper. Then, mix it well.
Step 3: Heat a pan with some olive oil. Keep it at medium-low heat.
Step 4: Add the mushroom first and fry it for 2 minutes. Then, add chopped tomatoes and chorizo. Continue frying for another 2 minutes.
Step 5: Add chopped parsley into the pan and keep stirring for 1 minute.
Step 6: Add the mixture of eggs into the pan and lower the heat.
Step 7: Cook the omelette for 3 minutes and fold it from both sides.
Step 8: Turn off the heat and serve it on a plate with a tiny sprinkle of pepper on top for the finishing touch.
