When it comes to avocado, I will definitely give it a vote for a healthy and nutritious brekkie. A nice breakfast is what I love doing to start the day. Especially when my husband is a British man, every breakfast counts.
However, I am not going into a full English breakfast this time. It will be a simpler, quicker, easier and quite a common recipe for all avocado lovers. Today, the wifey life wants to share one of the favourite breakfast recipes - poached egg on avocado toast with bacon.
Ingredients (for 2 people):
2 slices of bacon (I use British bacon due to less fat and thicker size than American bacon. The bacon shouldn't be too crunchy or smoky-burnt as it will not go well in the whole combination of one bite)
1 avocado (My avocado doesn't look perfect, but it's perfectly ripe to mash with a fork)
2 slices of bread (I use wholewheat bread, but you can use whichever bread/sandwich that you prefer)
2 eggs
Let's cook!
Step 1: This is an additional flavour to the mashed avocado. You can crush some nuts to add in because the crunchy nutty taste will enhance the avocado and make it interestingly delicious. You can use any kinds of nuts you like. I use some walnuts here.
Step 2: Mash the avocado with a fork. Add a pinch of salt, black pepper and a dash of olive oil. Squeeze a bit of lemon juice in the mixture. Then, add the crushed nuts along with a few chilli flakes because the spice of the chilli flakes will give you a nice kick in one bite. Mix them all well and give it a taste.
Step 3: Fry the bacon with a dash of olive oil in the pan until the bacon gets a nice brown colour.
Step 4:
Boil some water in a kettle and add it in a pot to make the process quicker. Or you can boil the water in a pot from the beginning.
Don't bring the water into boiling, but just keep it simmering, because the whole concept of poaching egg is using hot water to cook the egg.
Lower the heat and gently keep the water moving around with a spoon. Crack an egg into a small bowl or cup. Dip the bowl with the egg into the water, let the water cook the egg for a bit before dropping it into the water completely. This technique will prevent the wispy white.
Take the egg out after 3 minutes if you like it soft poached, or 5 minutes if you prefer a more solid yolk.
If you go to a restaurant, the chef might add vinegar into the water to make the white more solid and the egg will look prettier for presentation. However, I prefer the traditional way of poaching egg with just water.
Step 5: Time for presentation on the plate and enjoy the breakfast with your loved one!
