Chicken soba noodles salad

Another easy peasy recipe of salad that won't take much of your lunchtime, but give you perfect nutrition to boost your energy for the rest working-from-home day.


I've always loved a healthy bowl of nutrition because healthy eating is very important to me. My husband and I love this salad bowl as it's not heavy but a great source of nutrition.


Ingredients (for 2 people):

  • Shredded chicken: you can buy a BBQ chicken from the supermarket and shred it into small pieces.

  • 2 sweet corns: the sweet corns from the tin are tasteless, so I bought the sweet corns and boil them.

  • 1 avocado

  • 2 cucumbers

  • White Shimeji mushroom

  • 1 carrot

  • Soba noodles

  • White sesame seeds

  • Sesame oil

  • Kewpie roasted sesame salad dressing: you can find it in big supermarkets like Carrefour, Spinneys or Waitrose.


Let's make some salad!


Step 1: Cook the sweet corns in boiling water for 10 minutes, then take the corn seeds out.

Step 2: Cook the soba noodles in boiling water for 3 to 5 minutes, then drain them. Add a drizzle of sesame oil so they won't stick together.

Step 3: Cut the cucumbers, carrots and avocado into slices. Don't forget to cut the bottom and wash the white Shimeji mushroom.


Step 4: Fry the carrot slices and mushroom in sesame oil with a pinch of salt and pepper.


Step 5: Add all the prepared ingredients to a salad bowl with a drizzle of sesame oil.

Step 6: Add the dressing, mix them well and enjoy your salad bowl.
