If it's a dinner for two, this recipe will serve enough portion to keep two tummies full, but not make them heavy.
Wait! Don't prepare the grill!
You can just simply do the barbecue in the oven. Less effort, but the taste will be as smoky and tasty as on the grill. Let's crack on this Vietnamese BBQ snack!
Ingredients (for 2 people):
250g of minced beef (or minced pork). Or you can mix both of them as the fatty blend will keep the moisture of the meat better while barbecuing. However, I use only minced beef this time, but I go for lean mince.
Fresh lemongrass, chilli, garlic to marinate the beef.
Oyster sauce and Hoisin sauce. You can find them at any Asian supermarkets. If you cannot find Hoisin sauce, you can use Black Bean sauce instead.
Carrot to make Vietnamese pickle. Traditionally, Vietnamese pickle has both carrot and daikon radish, but today, I only have a carrot left in my fridge.
Let's marinate the beef!
Step 1: Chop garlic, lemongrass and chilli finely for about a teaspoon of each.
Step 2: Add the chopped combination above into the minced beef along with a teaspoon of oyster sauce, a teaspoon of honey, a pinch of salt and pepper. Then, mix them well and let them marinated from 20 to 30 minutes.
It's time for BBQ!
Step 3: Turn your oven on at 180 Celsius degrees for 10 minutes before barbecuing.
Step 4: Make the meatballs and lay them on the tray with a bit of olive oil. Don't forget to use aluminium foil underneath! Then, start barbecuing in the oven for 5 - 7 minutes at 200 Celsius degrees. Actually, browning only takes 5 minutes. If you want it to be a bit caramelised and have the smoky flavour, leave them for a bit extra 2 minutes.
Vietnamese pickle
Step 5: Cut the carrot into thin slices, then add 1/2 teaspoon of salt into the carrot slices. Leave them for 10 minutes.
Step 6: After 10 minutes, squeeze all the water out of carrot slices. Add 1/2 teaspoon of sugar and a teaspoon of vinegar. Mix well then leave them for 20 minutes. Then, they're ready to serve.
Dipping sauce
Step 7: Add 2 tablespoons of Hoisin sauce with 2 tablespoons of water into a pan. Then, add 1 tablespoon of peanut butter. (Tip: the crunchy peanut butter will make the taste better).
Step 8: Mix the combination well on medium heat for 3 minutes. You can also add some chilli flakes if you like it spicy along with some extra crushed peanuts.
Ready to serve!
With the BBQ beef, the dipping sauce, the pickle, some lettuces, some brown bread and the rice papers, you can make sandwiches and spring rolls. Or you can just simply have the BBQ beef wrapped in lettuce and dip in the sauce.
